Healthier Banana Based American Pancakes :
On a Sunday morning, nothing’s better than biting into warm, fresh pancakes. You can make these tasty stacked pancakes without hassle nor remorse.
- Mash up your bananas in a large mixing bowl (you can do this with a fork).
- Add your eggs, oats and vanilla essence and mix again.
- Once everything is incorporated, gently fold in your blueberries*.
- As your batter is ready, heat up your frying pan on medium high.
- Add a spoonful of butter and rub it on the surface of the pan, it should make a sizzling sound (if you want a healthier option, you can use coconut oil instead of butter).
- Now poor some of your batter onto the hot surface, turn your settings to medium low and cook for about 2-3 minutes.
- Flip your pancake and cook for another 2 minutes (or until it has dark golden brown patches on booth sides).
- Repeat this process until all the batter has been used.
Ingredients :
2 ripe bananas
45g of oats
2 eggs
A large handful of blueberries*
1 teaspoon of vanilla essence
*If you wish something sweeter, just add chocolate chips instead :)
Classic Pesto Pasta with a Homemade Twist:
Who doesn’t fancy a big bowl of pasta when you’re having a cozy lunch at home, especially when it tastes good ? With this recipe, you can have all of that plus it’s quick, easy and guilt-free !
- First, cook your penne pasta in salted water until it is al dente (it should be cooked but still have some bite to it).
- While it’s cooking, chop all cherry tomatoes in two.
- In a food processor (or blender if you’re not a big cook), add all the ingredients needed to make the pesto sauce. Then mix until you achieve a thick and creamy consistency.
- Once your pasta is cooked, drain the water out and place it back onto the stove at low heat. Add the tomatoes and sauce then mix well until it’s all combined. This part is optional, but if you like cheese as much as I do, you can add some parmesan and stir once again.
- Take it off the heat and serve.

3 cups (or ½ a packet) of fresh spinach - 1 box whole wheat pasta, prepared
1 cup (¼ packet) fresh basil - 2 cups cherry tomato, halved
90g pine nuts - Parmesan (optional)
Big handful of parmesan cheese (optional)
3 cloves garlic
salt, to taste
60g lemon juice
6 tablespoons olive oil
Salmon fillet with Boursin and vegetables:
Salmon might seem complicated or daring but it’s generally quite easy to make and you can achieve very flavourful results in a short amount of time. Follow these few steps to have a delicious meal in no time.
- Makes for two people
- Preheat your oven to 180°C.
- Take out your salmon and place it on a aluminium lined baking tray (or you could use a rectangular cooking tin without aluminium). Spread the Boursin on top and sprinkle some aneth over the surface. You can then add a few pinches of salt and pepper to finish it off. Set the tray off to one side.
- Next, chop the carrots horizontally. On another aluminium lined tray, combine the chopped carrots with olive oil, parsley, paprika, salt and pepper.
- Put both trays in the oven for approximately 20-25 minutes.
