Use this recipe to make any shaped biscuits, but obviously if you have a unicorn biscuit cutter then use it. The recipe is taken from my mum's cookbook that she won for her excellent sewing skills. All the measurements were in ounces so I had to convert them into slightly awkward metric measurements.
Ingredients
- 140g flour (5oz)
- 30g cornflour (1oz)
- 85g margarine (3oz)
- 1/2 a teaspoon of baking powder
- 85g castor sugar (3oz)
- 1 tablespoon of milk
- 1 egg yolk
- 1 teaspoon of vanilla essence
- icing sugar & water
- hundreds and thousands (sprinkles)
Method
1) preheat oven to 200°C
2) Mix flour and cornflower in a bowl then rub in the margarine with your fingertips (as though you were making crumble) until the mixture looks like breadcrumbs.
3) Stir in baker powder and sugar.
4) In another bowl beat the milk, egg yolk and vanilla essence together. Add to the rest of the mixture and mix it all up to form a firm dough.
5) Roll it out on a lightly floured surface and cut out your unicorns.
6) Cook for 5 to 10 minutes (until the biscuits are golden brown)
7) While they are cooking, mix some icing sugar with water to make icing (add flavouring or colouring if you want)
8) Once the biscuits are cooked, spread the icing on then dip them in hundreds and thousand for the perfect rainbow effect🌈👌
