I originally stumbled upon this recipe completely by chance while doing what I do best: procastinating on YouTube. I was simply blown away by how seemingly easy this recipe is, and how it also doubles as a tasty alternative to the rather bland packaged food bearing a "Gluten-Free" label. If you're tired of the usual every day cereal-bowl grind, or want to get a taste for the joy of cooking without all the fuss, this recipe should provide ample delight from your taste buds and peers alike! Ingredients (serving size for 1 person, double amounts as necessary):
- 1 ripe banana
- 2 large eggs
- As much cinnamon as desired
....yeah...that's it.
Preparation:
1) Split the banana in half and mash it up in a bowl with a fork, large chunks should not be present.
2) Add your eggs and mix with the fork until the yolk and egg white are well blended together along with the banana "purée"
3) Add your cinnamon, the more the merrier
4) Butter your pan and place it on a stove set to medium-low heat. To avoid burning the pancakes later on as the pan gets hotter, turn the stove down to its lowest setting. This should also make flipping the pancakes a lot easier since it will cook evenly, and you will still get that beautiful golden-brown tint.
Serving Suggestions:
Many people will find that due to the natural sweetness offered by the banana and cinnamon, you won't really need any extra sweetening on top. However, I must say that the hint of cinammon coupled with some authentic dark Canadian maple syrup is truly delightful. Brown sugar and honey also work wonders on these.
